This was breakfast and no we are not trying to give ourselves a heart attack. It's Christmas, so you should be able to splurge every now and again. We had Hi Rise Apple Pancake (recipe below) with bacon, and maple sausage. Oven Hi Rise Apple Pancake
1/2 tsp. cinnamon
2 red apples (any will do)
1 tsp lemon juice
2 T brown sugar
3 eggs
1/2 cup plus 2T flour
1/2 cup plus 2T milk
1/4 cup white sugar
5 T butter
Preheat oven to 425. Cut apples into slices, toss with lemon juice, brown sugar, and cinnamon. Set aside. Combine eggs, flour, white sugar, and milk. Beat lightly with an egg beater. Batter will be lumpy. Heat butter in 11" or 12" skillet (cast iron works best) on the stove top till the butter is foamy and hot. Remove from heat and quickly add batter. Top with apple mixture. Place in oven and bake 25 minutes or till puffed and golden brown. Serve with powered sugar, syrup, or jam, all are optional.
